For those with a real sweet tooth, one of the happiest times of the year is Carnival.
In fact, between February and March, the counters of pastry shops and bakeries and the shelves of grocery stores are filled with traditional sweets and it is impossible to resist the temptation to taste a delicious fritter.
The most common and widespread desserts in our country are, in fact, the frappe and the castagnole but there is no lack of variants or other types of delicacies such as zeppole, stuffed carnival bugie, sweet ravioli, Neapolitan graffe, and girelle.
In this article we also want to propose a really tasty variant to make your Carnival even more pleasant: the Carnival fritters with coffee.
So we started with a classic dessert and revisited it thanks to a special ingredient: coffee, obviously produced with our lever coffee machines.
To make tasty dishes, for connoisseurs, it is important to choose ingredients of excellent quality.
Ingredients to make sweet fritters with coffee
6 people serving:
- 2 eggs;
- 50 g butter;
- 250 g flour type 00 (plus another 50 g for the work surface);
- 1/2 packet baking soda;
- 50 g granulated sugar;
- 1 pinch of salt;
- sunflower oil or other oil for frying;
- powdered sugar to decorate.
To make the coffee cream
- 2 cups of coffee prepared with the Pontevecchio lever machine;
- 3 egg yolks;
- 120 g of sugar;
- 20 g of flour;
- 20 g of corn starch;
- 500 ml of milk.
Method
Coffee cream
The first step in making Carnival sweet fritters is the preparation of the coffee cream.
Let’s see how to do it!
Prepare two cups of coffee with your professional coffee machine and let them rest. Meanwhile, put the egg yolks and sugar in a saucepan and beat to get a frothy mixture.
At this point add the coffee, continuing to mix.
To avoid lumps, mix the corn starch and flour and pass everything through a sieve. Put the flour into the pot gently and keep stirring with a wooden spoon or whisk.
Pour in the milk slowly, making sure it is not too cold.
Put the pot on the stove, keeping the heat very low.
Stir until the cream is cooked. Boil for a couple of minutes and voila, turn off the stove and let it rest. To prevent a more compact layer from forming on the cream, cover it with plastic wrap or add a knob of butter.
Once the cream has cooled, let’s move on to preparing the dough for your Carnival sweets.
Dough
Before starting with the dough, take the butter out of the refrigerator and let it soften.
Combine the sugar and the flour in a fairly large bowl. Add the eggs and mix. Put the butter in another bowl and work it so that it becomes creamy and soft.
Now mix the butter with the other ingredients.
Add a pinch of salt to the dough. Finally, sift the baking powder and combine it with the rest of the ingredients.
Blend your dough energetically with your hands on a work surface or pastry board. Once it has reached the right consistency, cover it with a tea towel and let it rest.
After about 20 minutes, take your dough and divide it into pieces of the same size. Shape into balls with your hands and leave them on the pastry board so they are ready when you start frying.
Now take a deep fryer or pan with a high edge, so that the fritters can be completely covered with oil. Add the oil and bring it to the right temperature (to check it, put a small piece of dough in the pan and see if it sizzles).
At this point, add one ball at a time into the hot oil. Do not exceed the quantity, otherwise, you risk lowering the oil temperature.
Stir with a slotted spoon and cook the fritters evenly. Once cooked on all sides, drain and place them in a tray with absorbent paper. Doing so will remove the extra oil.
Once you have cooked all the fritters, take sac à poche and insert the Pontevecchio coffee cream.
Fill the fritters with the cream and arrange them on a tray. At this point, sprinkle the icing sugar on the fritters with a sieve.
Now your coffee Carnival fritters are ready to be eaten!
