HOW THE LEVER COFFEE MACHINE WORKS

The operation principle of a lever coffee machine is rather simple and effective. Inside it, there are a cylinder and a piston that vaguely resemble the structure of a combustion engine.
When the lever is lowered the piston rises. This lets the water coming from the boiler flow through a hole. In this way, the cylinder is filled by the amount of water needed to make the desired coffee.
Besides, unlike in the automatic coffee machines, in the lever ones the water in the boiler remains clean because the “reflux phenomenon”, that causes the deposit of residual coffee in the water, doesn’t happen. In this way, the internal ducts remain clean and will not get blocked and the coffee quality will be preserved cup after cup.

Another distinctive feature of the lever coffee machines is that, unlike with the automatic coffee machines, the person that makes the coffee can manage the various stages of the extraction. For example, you can choose how many seconds the water will remain in contact with the coffee during the pre-infusion phase. In this way you can extract, depending on the type of coffee used, all the nutrients of the ground, keeping the quality high and the flavor that distinguishes the chosen blend.
