Meanwhile, transfer the egg yolks to the bowl of a planetary mixer. Run it on low speed only when the coffee syrup has almost reached 121°C. When the syrup is at temperature and the yolks have become frothy, slowly pour the coffee into the bowl while continuing to whip, increasing the speed until the cream is thick and well chilled.
Whip the fresh cream, but not stiffly, but semi-whipped. Then add the mascarpone and mix gently with a spatula, making movements from the bottom to the top to keep the air incorporated.
