  3. Distributing and levelling: once the powder has been poured in, give the filter holder a couple of light taps with the palm of your hand. This helps to distribute the coffee evenly, eliminating any gaps. To protect the spouts during pressing, place the filter holder on a special mat or use a professional pressing station.
  4. Pressing: apply vertical pressure of about 15 kg, while maintaining an ergonomic hand and arm position. Practical tip? Practise with a bathroom scale to memorise the right pressure. Start with light pressure and then gradually increase. Your goal is to achieve an extraction of 25 ml in 25 seconds.
  5. The final touch: complete the pressing with a slight rotation of the press. This movement, known as ‘polishing’, gives the surface of the coffee a uniform, shiny appearance and ensures that the water is evenly distributed during extraction.

Remember: water will always follow the path of least resistance. Uneven pressing will create preferential channels, compromising the extraction. The aim is to create a perfectly compact ‘disc’ that allows the water to flow evenly through the entire coffee.
