Legend has it that it was discovered by a shepherd named <\/span><b>Kald\u00ec<\/b><span style=\"font-weight: 400;\">, who lived on the <\/span><b>Ethiopian highland of Caffa<\/b><span style=\"font-weight: 400;\"> (from which the name &#8216;coffee&#8217; derives).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Apparently, the sheep he was leading to pasture fed on some of the beans, getting a <\/span><b>great excitement<\/b><span style=\"font-weight: 400;\"> from them in return. This unusual reaction did not go unnoticed in the eyes of the shepherd, who decided to sample some beans himself, discovering for the first time ever the <\/span><b>energising effects<\/b><span style=\"font-weight: 400;\"> of caffeine.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">According to another version of the legend, however, it was the <\/span><b>Ethiopian ancestors of the Oromo group<\/b><span style=\"font-weight: 400;\"> who discovered coffee and its benefits. Also, shepherds, they used to create <\/span><b>energy &#8216;snacks&#8217;<\/b><span style=\"font-weight: 400;\"> by mixing coffee fruits with fat, to be consumed during the long hours of herding.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A third and even more suggestive legend has it that coffee was a <\/span><b>gift from heaven sent by the archangel Gabriel to Muhammad<\/b><span style=\"font-weight: 400;\"> in order to give him strength and vigour during a night battle against the infidels. It is said that thanks to this &#8216;miraculous gift&#8217;, the prophet was not only able to unseat no less than forty knights, but even to satisfy as many virgins.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Minor licentiousness aside, this was only the beginning. Once discovered, coffee was an <\/span><b>almost immediate success<\/b><span style=\"font-weight: 400;\">, triggering a veritable <\/span><b>&#8216;mission of expansion&#8217;<\/b><span style=\"font-weight: 400;\"> that involved the whole world.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Types of coffee<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">While legends tell us about the discovery of coffee, <\/span><b>botany<\/b><span style=\"font-weight: 400;\"> reveals interesting details about the plant itself. Coffee is a tropical plant that can grow up to 10 metres in height, but is generally cultivated at around 2 metres to facilitate the harvesting of the fruit.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">There are many species of plants in the genus Coffea, but only two are of significant economic importance for the production of the coffee we drink every day:<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Coffea arabica, commonly known as <\/span><b>Arabica<\/b><span style=\"font-weight: 400;\">;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Coffea canephore, better known as <\/span><b>Robusta<\/b><span style=\"font-weight: 400;\">.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">Each of these species has unique characteristics that influence the taste and quality of the coffee produced.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Arabica: the king of coffees<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">Arabica is considered the most valuable variety and accounts for about three quarters of the world&#8217;s coffee production. Here are some of its distinctive characteristics:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It produces a very good quality, aromatic coffee with a less bitter and more persistent flavour;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It has a relatively low caffeine content of between 0.9% and 1.7%;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It is sensitive to heat and humidity, thriving at altitudes above 900 metres;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The quality of the coffee improves as the altitude of cultivation increases.<\/span><\/li>\n<\/ul>\n<h3><span style=\"font-weight: 400;\">Robusta: the resilient coffee<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">Robusta, which constitutes the remaining quarter of world production, has very different characteristics:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It produces a very full-bodied coffee with a distinctly more bitter taste;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It has a higher caffeine content, ranging from 1.6% to 2.8%;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It grows at lower altitudes, between 200 and 300 metres above sea level;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It is more resistant to disease and adapts better to unfavourable climatic conditions.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">The choice between Arabica and Robusta, or a mix of the two, greatly influences the taste profile of the coffee we drink.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">How did coffee spread?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">From the <\/span><b>10th &#8211; 11th century<\/b><span style=\"font-weight: 400;\">, coffee began to spread to the Arabian Peninsula, i.e. <\/span><b>present-day Yemen<\/b><span style=\"font-weight: 400;\">, thanks to imports by Arab merchants. From there it continued its course towards the <\/span><b>Middle East and Constantinople<\/b><span style=\"font-weight: 400;\">: two territories that were somewhat the focus of its spread, as it was in these areas that Europeans first came into contact with what was to be their drink of the future.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Starting in the <\/span><b>Middle Ages<\/b><span style=\"font-weight: 400;\">, in fact, the coffee plant was exported from Yemen to <\/span><b>the city of Moca or Mokh\u0101<\/b><span style=\"font-weight: 400;\">, from which the <\/span><b>current name of Moka<\/b><span style=\"font-weight: 400;\"> is derived. As for the very first &#8216;local&#8217; records, they date back to the 1670s, thus coinciding with the trade of Venetian merchants.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But if you think that the history of coffee is studded with successes and that its spread never encountered any obstacles, we must unfortunately disappoint you. Our favourite drink, in fact, <\/span><b>has not always had an easy life<\/b><span style=\"font-weight: 400;\">, to the point of even being banned by several religions!<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Coffee was criticised by the Church<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Since time immemorial, our Church has never looked favourably on anything that could distract and cheer up believers. When it first came into contact with coffee, consequently<\/span><b>, its reaction was not at all positive<\/b><span style=\"font-weight: 400;\">. Indeed, the high prelates showed a certain fear towards that black drink with such stimulating effects.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Considering it a real <\/span><b>temptation of the devil<\/b><span style=\"font-weight: 400;\">, the Church in fact tried to prohibit the consumption of coffee. That is, at least, until <\/span><b>Pope Clement VII<\/b><span style=\"font-weight: 400;\"> tasted a cup and was literally won over by it: to such an extent that coffee officially went from being a &#8216;devilish drink&#8217; to a <\/span><b>&#8216;Christian drink&#8217;<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">If episodes of this kind can make you smile, bear in mind that it was by no means an isolated case. Coffee suffered a similar fate in <\/span><b>Islamic territory<\/b><span style=\"font-weight: 400;\">, where it was officially <\/span><b>banned in 1511<\/b><span style=\"font-weight: 400;\">, again because of its stimulating effect. Its saviour, in this case, was Sultan <\/span><b>Suleiman I the Magnificent<\/b><span style=\"font-weight: 400;\">, who authorised its consumption again <\/span><b>from 1524<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Coffee houses and caf\u00e9s<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">At this point, <\/span><b>the history of coffee moves to Italy<\/b><span style=\"font-weight: 400;\">: the country that, before all others, had the merit of <\/span><b>introducing the very first coffee houses<\/b><span style=\"font-weight: 400;\">. It was in fact in Venice that public places were founded where people gathered to consume the exquisite black drink, and it was also in this city that what is still considered the oldest coffee shop in the world was founded: the renowned <\/span><b>Caff\u00e8 Florian<\/b><span style=\"font-weight: 400;\">, active since as far back as <\/span><b>1720<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">From Venice, coffee houses and caf\u00e9s began to spread to the rest of Italy. The best known are <\/span><b>Caff\u00e8 San Carlo in Turin<\/b><span style=\"font-weight: 400;\">, <\/span><b>Caff\u00e8 Greco in Rome<\/b><span style=\"font-weight: 400;\"> and <\/span><b>Caff\u00e8 Pedrocchi in Padova<\/b><span style=\"font-weight: 400;\">, which continue to operate to this day. But the true primacy, within the Italian history of coffee, was achieved in the <\/span><b>20th century<\/b><span style=\"font-weight: 400;\">: a century that marked the birth of the <\/span><b>much-loved espresso coffee<\/b><span style=\"font-weight: 400;\">, a 100% Italian pride. And, as they say, the rest is history.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Around the world in a cup: a journey through coffee traditions<\/span><\/h2>\n<p><b>Coffee is a true cultural phenomenon<\/b><span style=\"font-weight: 400;\"> that has conquered the entire world. Each country has developed its own <\/span><b>unique traditions<\/b><span style=\"font-weight: 400;\"> related to this precious beverage, turning it into an experience that goes far beyond the simple act of drinking. Let&#8217;s take a virtual journey through some of the most fascinating coffee-related rituals in different cultures.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In <\/span><b>Ethiopia<\/b><span style=\"font-weight: 400;\">, the cradle of coffee, the Buna ceremony is a real social ritual. The beans are freshly roasted, ground and prepared in a special container called a \u2018jebena\u2019, creating an atmosphere of sharing and conviviality.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Moving on to <\/span><b>Turkey<\/b><span style=\"font-weight: 400;\">, we encounter the famous Turkish coffee, known for its unique preparation. Finely ground beans are simmered with sugar and cardamom in a pot called a \u2018cezve\u2019, resulting in a thick and aromatic drink.<\/span><\/p>\n<p><b>Morocco<\/b><span style=\"font-weight: 400;\"> offers us <\/span><i><span style=\"font-weight: 400;\">Nous Nous<\/span><\/i><span style=\"font-weight: 400;\">, a delicious mix of strong espresso and foamed milk, served in small glasses with a touch of sweetness.<\/span><\/p>\n<p><b>Italy<\/b><span style=\"font-weight: 400;\">, the home of espresso, has elevated this drink to a true art. Here, coffee is a moment of social pause, to be enjoyed at the bar, far from the hustle and bustle of \u2018coffee to go\u2019.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In <\/span><b>Greece<\/b><span style=\"font-weight: 400;\">, the frappe has become a symbol of post-war coffee culture. This refreshing drink made of instant coffee, ice and milk is perfect for hot Mediterranean afternoons.<\/span><\/p>\n<p><b>Japan<\/b><span style=\"font-weight: 400;\"> fuses tradition and modernity in its coffee culture.
