How to tell them apart"},"content":{"rendered":"\r\n<p>Ordering coffee at a coffee shop means witnessing a myriad of variables in consumer choices.<\/p>\r\n\r\n\r\n\r\n<p>In glass, with cold milk added, spiked, large cup, water on the side, just to name a few.<\/p>\r\n\r\n\r\n\r\n<p>But having to make a choice between what people want most among the variations of a <strong>good coffee<\/strong>. \u00a0<\/p>\r\n\r\n\r\n\r\n<p>The choices are between short, ristretto or long coffee.<\/p>\r\n\r\n\r\n\r\n<p>But what are the real differences between these three? In a fast and immediate process, hence &#8216;espresso&#8217;. \u00a0<\/p>\r\n\r\n\r\n\r\n<p>The quantity that the machine produces depends on how long this process takes: the time it takes to make a <strong>normal espresso<\/strong> is between twenty and thirty seconds (if we want to be precise, it&#8217;s twenty-five), so to make a <strong>good ristretto coffee<\/strong> you will simply need to spend less time on this step. In terms of quantity, ristretto coffee is less than 30ml (the exact and perfect amount of an espresso) and is very aromatic and creamy, with intense and concentrated aromas. The taste is therefore more pronounced, and contrary to what you might think, <strong>it has less caffeine<\/strong> than long or short coffee. In fact, the common mistake is to prolong the duration of the passage of water in the coffee (i.e. <strong><a href=\"https:\/\/pontevecchiosrl.it\/en\/here-are-the-most-important-methods-for-extracting-coffee\/\" target=\"_blank\" rel=\"noreferrer noopener\">extraction<\/a><\/strong>) up to forty seconds, resulting in a more diluted drink, more bitter and with a higher <strong>caffeine content<\/strong>. This is because exceeding the twenty-five seconds for the duration of extraction, or letting <strong>too much water pass through the filter<\/strong>, results in the release of undigestible substances, which give the coffee a bitter taste with the aftertaste of burnt flavour. \u00a0<\/p>\r\n\r\n\r\n\r\n<h3 class=\"wp-block-heading\">Few people know the correct way to prepare long coffee<\/h3>\r\n\r\n\r\n\r\n<p>The correct way is to prepare a normal <strong>espresso coffee,<\/strong> serve it in a cup <strong>with hot water<\/strong> on the side (or cold, depending on taste). This preserves the drink&#8217;s natural aromas, the right balance of flavours and smells. The amount of caffeine is therefore only increased if we make the extraction time longer, <strong>not by adding water to the cup<\/strong>. Short coffee is nothing other than what we commonly call &#8216;<strong><a href=\"https:\/\/pontevecchiosrl.it\/en\/make-a-top-quality-espresso-with-our-coffee-machine\/\" target=\"_blank\" rel=\"noreferrer noopener\">espresso<\/a><\/strong>&#8216; in Italy. It is a terminology that we have probably borrowed from abroad, where it is used to differentiate it from long coffee, which as we have seen is the standard. So there is no difference between saying &#8220;espresso&#8221; or &#8220;short&#8221;, but you can run the risk of being misunderstood and receiving a &#8220;ristretto&#8221; instead of a normal espresso.<\/p>\r\n<h2><b>Arabica and Robusta: does the variety of bean also change?<\/b><\/h2>\r\n<p><span style=\"font-weight: 400;\">When it comes to caffeine and coffee strength, it is not only the extraction time that matters, but also the variety used. The two main species of coffee are <\/span><b>Arabica <\/b><span style=\"font-weight: 400;\">and <\/span><b>Robusta<\/b><span style=\"font-weight: 400;\">, which have significant differences.<\/span><\/p>\r\n<p><b>Arabica <\/b><span style=\"font-weight: 400;\">is considered more valuable: it grows at high altitudes, has a more complex aromatic profile, <\/span><b>sweeter notes<\/b><span style=\"font-weight: 400;\"> and a <\/span><b>slight acidity<\/b><span style=\"font-weight: 400;\">. It <\/span><b>contains less caffeine<\/b><span style=\"font-weight: 400;\"> than Robusta (about 1\u20131.5%). The result in the cup is a <\/span><b>more elegant and fragrant coffee<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\r\n<p><b>Robusta<\/b><span style=\"font-weight: 400;\">, on the other hand, is more resistant and grows at lower altitudes. It has <\/span><b>a stronger, fuller-bodied and often more bitter taste<\/b><span style=\"font-weight: 400;\">. It contains almost <\/span><b>twice as much caffeine<\/b><span style=\"font-weight: 400;\"> as Arabica (around 2\u20132.7%) and is often used in blends to increase body and crema, as well as to give the drink more \u201ckick\u201d.<\/span><\/p>\r\n<p><span style=\"font-weight: 400;\">Many <\/span><b>bar blends combine Arabica and Robusta<\/b><span style=\"font-weight: 400;\"> precisely to balance aromas, structure and caffeine content. For this reason, two espressos prepared in the same way may have slightly different intensities and caffeine contents depending on the blend used.<\/span><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Is there a difference in caffeine between short, ristretto and long coffee?<\/h2>\r\n\r\n\r\n\r\n<p>The amount of caffeine only changes if you make the extraction time of the drink longer, but as we have seen, exceeding the canonical twenty-five seconds leads to a worsening of the taste, so you should never do this.
